Low Carb Garlic Butter Chips

Ingredients:

 

  • 100g coconut flour
  • 240mL water
  • 15g xanthan gum
  • Salt, to taste
  • Cooking oil for frying
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • Parsley, for garnish

Instructions:

 

  1. In a mixing bowl, combine the coconut flour and xanthan gum. Stir well to evenly distribute the ingredients.
  2. Slowly add the water to the dry ingredients, while stirring continuously. Mix until you get a smooth and thick batter.
  3. Season the batter with salt to your liking, but keep in mind that the fries will shrink as they fry, so don't overdo it.
  4. Divide the batter into small portions and roll each portion into a ball. Flatten each ball into a thickness of about 5cm and cut strips to resemble the shape of fries.
  5. Heat up cooking oil in a frying pan over low to medium heat.
  6. Gently place the fries in the hot oil and cook slowly, turning occasionally, until they turn golden brown and crispy. Use a slotted spoon or a mesh strainer to remove the fries from the oil and transfer them to a paper towel-lined plate to drain excess oil.
  7. In a separate pan, melt the butter over low heat. Add the minced garlic and cook for a minute or two, until fragrant.
  8. Pour the garlic butter sauce over the fries and garnish with chopped parsley.
  9. Serve hot and enjoy your low-carb fries with garlic butter sauce.

Note: You can also experiment with different seasonings and dipping sauces to make your fries more interesting.
