Creamy marry me chicken in a sun-dried tomato sauce over white Qetoe Rice

Marry me chicken is the dinner that went viral for a reason: juicy chicken in a creamy sun-dried tomato and parmesan sauce that you want to mop up with everything on the table. Here it goes over fluffy Qetoe Rice, which has around half the carbs of regular rice, so the comfort stays and the carbs drop.

Ingredients

  • 1 packet Qetoe Rice
  • 400g skinless chicken thigh fillets
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 40g sun-dried tomatoes, drained and chopped
  • 3/4 cup chicken stock
  • 1/4 cup thickened cream
  • 30g parmesan, grated
  • 60g baby spinach
  • 1 tsp dried oregano
  • 1/2 tsp chilli flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method

  1. Season the chicken with the salt and pepper. Heat the olive oil in a large pan over medium-high heat and sear the chicken for 4 to 5 minutes each side until golden, then remove to a plate.
  2. Turn the heat to medium. Add the garlic, sun-dried tomatoes, oregano and chilli flakes and cook for 1 minute until fragrant.
  3. Pour in the stock and scrape up the browned bits, then add the cream and simmer for 2 minutes. Stir in the parmesan.
  4. Stir in the spinach until wilted, then return the chicken. Simmer for 6 to 8 minutes, turning once, until the chicken is cooked through with no pink in the middle.
  5. Meanwhile, cover the Qetoe Rice with boiling water, cover with a plate for 5 minutes, then fluff with a fork.
  6. Serve the chicken and sauce over the rice.

Tips

Sear the chicken hard so it gets a deep golden crust, then let it finish gently in the sauce. It stays juicy and the browned bits make the sauce. Leave a spoonful of the sun-dried tomato oil in the pan for extra flavour.
