Light, creamy, and packed with fresh spring flavours — this risotto is made with Qetoe Low Carb Rice for a guilt-free comfort food twist! Perfect for warmer days when you still want something cosy.

Ingredients
-
1 pack Qetoe Rice
- 1 tbsp olive oil or butter
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 cup peas (fresh or frozen)
- 1/4 cup white wine (optional)
- 1/2 cup vegetable stock
- 1/4 cup cream
- Zest of 1 lemon
- 2 tbsp grated parmesan
- Handful of fresh mint leaves
Directions
- 1️⃣ Cook Qetoe Rice first, set aside.
- 2️⃣ Sauté onion & garlic in oil until soft.
- 3️⃣ Add peas, lemon zest & wine, reduce slightly.
- 4️⃣ Stir in stock & cream, simmer gently.
- 5️⃣ Fold in cooked Qetoe Rice so it soaks up the sauce.
- 6️⃣ Finish with parmesan & mint.
