  • 8 large eggs
  • ½ cup 1% cottage cheese
  • ½ cup grated Pecorino Romano or Parmesan cheese
  • 1 cup chopped baby spinach
  • ¾ teaspoon kosher salt
  • Freshly ground black pepper, to taste

Directions

  1. Preheat & Prep:
  2. Preheat your oven to 350°F (175°C). Adjust the oven rack to the second highest position. Lightly coat a 10-inch oven-safe skillet with cooking spray. Mix the Eggs:
  3. In a medium bowl, whisk together the eggs, cottage cheese, Pecorino, spinach, salt, and black pepper. Set aside. Cook the Sausage:
  4. Heat the skillet over medium heat and add the sausage. Break it into small pieces using a wooden spoon and cook until browned and fully cooked (about 4 minutes). Assemble the Frittata:
  5. Pour the egg mixture into the skillet, stirring slightly to distribute the ingredients evenly. Let it cook for 1 minute to allow the bottom to set. Bake to Perfection:
  6. Transfer the skillet to the oven and bake until the top is set, about 16–18 minutes. Serve & Enjoy:
  7. Carefully slide the frittata onto a cutting board and slice it into 4 wedges. Serve warm with a fresh salad or whole-grain bread, if desired.
