This Korean cucumber noodle salad is fresh, crunchy, and packed with bold chilli-garlic flavour. Made with Qetoe Low Carb Noodles, it stays low carb and keto-friendly while still feeling indulgent and satisfying. • 1 large Lebanese cucumber (or 1/2 continental cucumber), thinly sliced into half-moons

• 60 g shredded cooked chicken or 1 soft boiled egg per serve
Directions
Rinse Qetoe Low Carb Noodles under cold water for 30 seconds to remove any packing liquid. Drain very well and gently pat dry.
Toss cucumber slices with salt and let sit for 5 minutes. Lightly squeeze out excess moisture so the salad stays glossy, not watery.
In a mixing bowl, whisk rice vinegar, soy sauce, sesame oil, gochugaru, erythritol, and garlic. Taste and adjust heat or acidity if needed.
Add Qetoe Low Carb Noodles and cucumber to the dressing. Toss thoroughly so the thick noodles are evenly coated.
Plate in a shallow bowl and gently twirl some noodles for height so they look generous and udon-like.
Sprinkle with sesame seeds and spring onion. Add chicken or egg if using. Serve immediately or chill for 10 to 15 minutes for deeper flavour.
