Ingredients
- 150g diced chicken breast
- 1 tbsp Cajun spice mix

1 packet Qetoe Low Carb Rice (80g uncooked = ~160g cooked)
- 1/2 red bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1 small brown onion, sliced
- 1 clove garlic, minced
- 1 tbsp olive oil or avocado oil
- 1 tbsp hot sauce (adjust to taste)
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Directions
- Season Chicken: Toss diced chicken with Cajun spice mix, salt, and pepper.
- Cook Chicken: Heat oil in a pan over medium-high heat. Pan-fry chicken until cooked through and slightly crispy on edges (about 6–8 minutes). Remove and set aside.
- Sauté Veggies: In the same pan, add more oil if needed. Sauté garlic, onions, and bell peppers until softened but still crisp (about 3–4 minutes).
- Combine: Return chicken to the pan. Add cooked Qetoe Rice and a splash of hot sauce. Toss everything well to combine and heat through. Adjust seasoning if needed.
- Serve: Plate and garnish with fresh parsley.
