This LOW CARB Marry Me Chicken Rice is your next go-to weeknight comfort meal. Juicy chicken in a creamy sun-dried tomato sauce, folded through warm, saucy Qetoe rice. Ready in 30 minutes and packed with flavour – it’s the kind of dish you fall in love with at first bite.

Ingredients

2 packs Qetoe Rice (prepared in advance – see below)
- 1.5 lbs (680g) boneless skinless chicken breast, cubed
- 2 tbsp olive oil
- 4 cloves garlic, minced
- ¾ cup sun-dried tomatoes (packed in oil, drained & chopped)
- 2 tsp Italian seasoning
- 1 tsp paprika
- ½ tsp red pepper flakes (optional)
- 1 cup chicken broth
- ¾ cup thickened cream
- ½ cup grated Parmesan
- Salt & pepper to taste
- Fresh basil, to garnish
Directions
- Sear Chicken: Heat olive oil in a large skillet over medium heat. Season cubed chicken with salt, pepper, and paprika. Add to pan and brown on all sides until golden and cooked through (about 6–8 mins). Remove and set aside.
- Build Sauce: In the same pan, add a touch more oil if needed, then sauté garlic until fragrant (30 sec). Stir in sun-dried tomatoes and Italian seasoning.
- Simmer: Pour in chicken broth, bring to a simmer, then reduce heat and stir in cream. Let it bubble for 3–4 minutes until slightly thickened.
- Finish: Add Parmesan and stir until melted through. Return chicken to pan, then fold in the prepped Qetoe Rice. Let it simmer for 1–2 mins so the rice soaks in the sauce.
- Serve: Top with fresh basil and extra cheese if desired.
