This chilli lime prawn noodle salad is bright, glossy, and made for hot nights. Juicy prawns, fresh herbs, and silky Qetoe Low Carb Noodles tossed in a zesty chilli dressing.
Ingredients

• 1 pack Qetoe Low Carb Ready-to-Eat Noodles (200 g)
- • 250 g raw prawns, peeled and deveined
- • 1 tbsp olive oil
- • 1 tsp chilli oil, plus extra to drizzle
- • Zest and juice of 1 lime
- • 1 tbsp fish sauce
- • 1 tsp honey or sweetener of choice
- • 1 cup Lebanese cucumber, thinly sliced
- • ½ cup fresh coriander leaves
- • ½ red chilli, finely sliced (optional)
Directions
- Pat the prawns dry and season lightly with salt.
- Heat olive oil in a pan over medium-high heat. Cook prawns for 1–2 minutes per side until pink and just cooked. Set aside.
- In a bowl, whisk together chilli oil, lime zest, lime juice, fish sauce, and honey.
- Add Qetoe Low Carb Noodles to the bowl and toss until glossy and coated.
- Fold through cucumber, coriander, and chilli.
- Top with prawns and finish with an extra drizzle of chilli oil and lime wedges.
