Juicy chicken thighs seared in garlic butter and finished in a creamy spinach and bacon sauce. Pure comfort, completely low carb, and perfect for weeknights. No pasta needed — just big flavour and a silky, rich sauce.

Ingredients

  • • 4 chicken thighs, boneless skin-on
  • • Salt and pepper
  • • 1 tbsp olive oil
  • • 2 tbsp butter
  • • 3 garlic cloves, minced
  • • 2–3 rashers bacon, chopped
  • • 1 cup thickened cream
  • • 2 cups baby spinach
  • • ¼ cup grated parmesan
  • • Squeeze of lemon (optional)

Directions

  1. Season the chicken thighs generously with salt and pepper.
  2. Heat the olive oil in a pan over medium-high heat. Add chicken skin-side down and cook until crispy and golden, then flip and cook through. Remove and set aside.
  3. Add the chopped bacon to the same pan and fry until crisp.
  4. Stir in the butter and garlic, cooking for 30 seconds until fragrant.
  5. Pour in the cream and stir through the parmesan. Simmer for 2–3 minutes until slightly thickened.
  6. Add the spinach and let it wilt into the sauce.
  7. Return the chicken to the pan and spoon the creamy garlic butter sauce over the top. Add a squeeze of lemon to finish if you like.
