- • 200 g chicken breast fillet
- • 1 tsp olive oil
- • ¼ tsp garlic powder
- • ¼ tsp oregano
- • Salt & pepper to taste
- • ½ cup diced cucumber
- • ½ cup cherry tomatoes, halved
- • 2 tbsp sliced Kalamata olives
- • 2 tbsp crumbled feta cheese
- • 2 tbsp tzatziki sauce
- • 1 tsp lemon juice + extra lemon wedges for serving
- • Fresh parsley or mint for garnish
Directions
- 1️⃣ Prepare the rice: Cook Qetoe Low Carb Rice using the absorption or microwave method until soft and fluffy with visible long grains. Let cool slightly.
