This Low Carb Chicken Pesto Risotto is creamy, fragrant, and incredibly satisfying — without the carb load. Qetoe Low Carb Rice absorbs the pesto and parmesan base beautifully for a high-protein, flavour-packed meal ready in minutes.
Ingredients

• 2 packets Qetoe Low Carb Rice
- • 300 g cooked chicken breast, shredded or chopped
- • 1 tbsp olive oil
- • 1 small onion, finely diced
- • 2 cloves garlic, minced
- • 1 cup chicken stock
- • 3 tbsp basil pesto
- • 1/4 cup grated parmesan
- • 1 cup baby spinach
- • Salt & pepper, to taste
- • Extra basil or parmesan, to serve
Directions
- Prepare Qetoe Rice by covering both packets with boiling water and letting sit for 5 minutes. Fluff with a fork.
- Heat olive oil in a pan and sauté onion until soft.
- Add garlic and cook for 30 seconds.
- Add the shredded chicken and warm through.
- Stir in the Qetoe Rice, then pour in the chicken stock. Stir for 2–3 minutes until creamy.
- Add pesto, parmesan, and baby spinach. Stir until spinach wilts and the risotto becomes silky.
- Season with salt and pepper.
- Serve with extra parmesan or basil.
