Creamy but fresh, cosy but light. This low carb lemon chicken penne uses Qetoe Penne tossed in a silky cream sauce with golden chicken, lemon zest, parmesan, and herbs. Comfort food that still feels bright and summery.
Ingredients

• 1 pack Qetoe Low Carb Penne
- • 1 tbsp olive oil
- • 200 g chicken breast or thigh, sliced
- • Salt and cracked black pepper
- • 2 cloves garlic, minced
- • Zest of 1 lemon
- • 2 tbsp lemon juice
- • ⅓ cup thickened cream
- • ¼ cup freshly grated parmesan
- • 1 tbsp butter
- • Fresh parsley, finely chopped
- • Extra parmesan and lemon slices to serve
Directions
- Add Qetoe Penne to boiling water, turn off heat, and soak for 5 to 6 minutes. Drain well.
- Heat olive oil in a pan over medium heat. Season chicken with salt and pepper and cook until golden and cooked through. Remove from pan.
- Lower heat slightly. Add butter and garlic to the pan and cook until fragrant.
- Stir in lemon zest and lemon juice, then pour in the cream. Simmer gently for 2 minutes.
- Add parmesan and stir until the sauce is smooth and glossy.
- Return chicken to the pan, then add drained Qetoe Penne. Toss gently until coated.
- Finish with parsley, extra parmesan, and lemon slices before serving.
