This Low Carb Mexican Chicken Rice Bowl is bursting with flavour — spiced chicken, zesty lime, fresh coriander, and fluffy Qetoe Low Carb Rice. All the taste of a burrito bowl, without the carbs.
Ingredients

• 2 packets Qetoe Low Carb Rice
- • 500 g chicken thigh or breast, sliced
- • 1 tbsp olive oil
- • 1 tbsp taco seasoning (low carb)
- • 1 tsp smoked paprika
- • 1 capsicum, sliced
- • 1/2 red onion, sliced
- • 1 tomato, diced
- • 1 avocado, diced
- • Juice of 1 lime
- • 2 tbsp fresh coriander, chopped
- • Salt & pepper, to taste
Directions
- Add boiling water to both packets of Qetoe Rice, cover, and let sit for 5 minutes. Fluff with a fork.
- Heat oil in a pan, add chicken, taco seasoning, paprika, salt, and pepper. Cook until golden.
- Add capsicum and red onion; sauté until softened.
- Stir lime juice through the cooked chicken mixture.
- Assemble bowls: divide Qetoe Rice into 4 servings, top with chicken mixture, tomato, and avocado.
- Finish with coriander and an extra squeeze of lime.
