Ingredients
- 1 pack Qetoe Low Carb Udon-Style Noodles (200 g ready to eat)
- • 1 large egg + 1 egg white, lightly beaten
- • 100 g chicken breast or firm tofu, thinly sliced
- • 1 tsp olive oil or sesame oil
- • ½ cup bean sprouts (fresh)
- • ¼ cup carrot matchsticks
- • 1 tbsp crushed peanuts (+ extra to serve)
- • 1 tbsp tamarind paste
- • 1 tsp soy sauce or tamari
- • ½ tsp fish sauce (optional)
- • ½ tsp lime juice
- • 1 tsp Qetoe Low Sugar Sweet Chilli Sauce (optional for mild heat)
- • 1 tbsp chopped fresh coriander
- • Lime wedges & extra bean sprouts for serving
Directions
Prepare the noodles: Rinse Qetoe Low Carb Noodles under warm water and drain well.
- Cook the protein: Heat oil in a pan over medium heat. Add chicken (or tofu) and cook until browned and cooked through. Set aside.
- Scramble the egg: In the same pan, add egg mixture and stir gently until just set. Add cooked protein back in.
- Add flavour: Stir in tamarind paste, soy sauce, lime juice, and (optional) Qetoe Sweet Chilli Sauce.
Toss noodles & veg: Add Qetoe Noodles, carrot, and bean sprouts. Toss gently for 1–2 minutes until evenly coated and heated through.
- Finish: Top with crushed peanuts, fresh coriander, and a squeeze of lime. Serve immediately for the best texture.
