This smokey BBQ pulled pork is the ultimate low carb Christmas crowd feeder. Slow-cooked until fall-apart tender, then finished with Qetoe Smokey BBQ Sauce for rich flavour without the sugar overload.

Ingredients
- 2 kg pork shoulder (boneless or bone-in)

1/2 cup Qetoe Smokey BBQ Sauce
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and cracked pepper, to taste
- 1/2 cup chicken stock or water
Directions
- Preheat oven to 160°C.
- Pat pork dry and rub all over with olive oil, smoked paprika, garlic powder, onion powder, salt and pepper.
- Place pork in a large roasting dish. Pour stock into the base of the tray.
- Cover tightly with foil and cook for 3.5 to 4 hours, until pork is very tender and pulls apart easily.
- Remove from oven and rest for 15 minutes.
- Shred pork using two forks, discarding excess fat.
- Toss shredded pork through Qetoe Smokey BBQ Sauce until evenly coated.
- Return to oven uncovered for 15 minutes to caramelise slightly, or serve immediately.
