This LOW CARB Spaghetti & Meatballs recipe brings classic Italian comfort without the carbs. Juicy homemade meatballs simmered in rich tomato sauce and served over Qetoe low carb spaghetti. It's hearty, cozy, and perfect for weeknight dinners or lazy weekends.

Ingredients

1 pack Qetoe Spaghetti
- For the Meatballs
- 300g beef or pork mince (or a mix)
- 1 egg
- 2 tbsp almond flour or grated Parmesan
- 2 tbsp chopped parsley
- 1 garlic clove, minced
- ½ tsp salt
- Cracked black pepper
- For the Sauce
- 1 tbsp olive oil
- 2 garlic cloves, minced
- ½ onion, finely chopped
- 1½ cups passata or crushed tomatoes
- 1 tbsp tomato paste
- ½ tsp dried oregano
- ½ tsp salt (or to taste)
- Pinch of chilli flakes (optional)
- 1 tsp balsamic vinegar (optional for richness)
- ¼ cup water or stock, if needed to thin
- Pasta
Directions
Add Qetoe Spaghetti to boiling salted water and cook for 5 minutes. Turn off the heat and let it sit for 1 more minute. Drain and set aside. Taste and adjust for perfect texture.
- Make Meatballs: In a bowl, mix all meatball ingredients together with your hands until just combined. Roll into small balls (about 12–14 total).
- Brown Meatballs: Heat a non-stick skillet with a little olive oil over medium heat. Sear meatballs on all sides until browned (they don’t need to be fully cooked through). Remove and set aside.
- Build the Sauce: In the same pan, add garlic and onion. Sauté until soft. Stir in passata, tomato paste, oregano, salt, and optional chilli flakes. Add balsamic if using. Simmer for 10 minutes.
- Simmer Meatballs: Return meatballs to the pan. Cover and simmer on low for 15 minutes until cooked through, turning gently halfway. Add a splash of water if sauce thickens too much.
- Finish Pasta: Fold cooked Qetoe Spaghetti into the sauce. Toss gently until coated. Let it sit on low heat for 1–2 minutes to absorb the flavour.
- Serve: Top with grated Parmesan, cracked pepper, and fresh basil if desired.
