LOW CARB SWEET CHILLI CHICKEN STIR FRY

A fast, saucy chicken stir fry coated in Qetoe Low Sugar Sweet Chilli Sauce. Sweet, sticky, and comforting without the sugar hit.
Ingredients

• 1 packet Qetoe Low Carb Rice
- • 400 g chicken thighs, sliced

• 2 tbsp Qetoe Low Sugar Sweet Chilli Sauce
- • 1 tbsp soy sauce or tamari
- • 1 tbsp olive oil
- • 1 clove garlic, minced
- • 1 tsp fresh ginger, grated
- • 1 cup mixed stir fry vegetables (capsicum, snow peas, broccoli)
- • Spring onion, sliced
- • Fresh coriander
- • Lime wedges to serve
Directions
- Add Qetoe Low Carb Rice to a heatproof bowl, cover with boiling water, cover and sit for 5 minutes. Fluff with a fork.
- Heat olive oil in a pan over medium heat.
- Add sliced chicken thighs and cook until golden and cooked through.
- Add garlic and ginger. Stir until fragrant.
- Add vegetables and cook until just tender.
- Pour in Qetoe Low Sugar Sweet Chilli Sauce and soy sauce. Toss until sticky and glossy.
- Serve over fluffy Qetoe Rice. Finish with spring onion, coriander, and a squeeze of lime.
