This Low Carb Tomato Basil Risotto is creamy, fresh, and packed with Italian flavour — without the heavy carbs. Qetoe Low Carb Rice absorbs the tomato and garlic base beautifully, creating a rich and vibrant risotto in under 15 minutes.
Ingredients

• 2 packets Qetoe Low Carb Rice
- • 1 tbsp olive oil
- • 1 small onion, finely diced
- • 2 cloves garlic, minced
- • 1 cup cherry tomatoes, halved
- • 2 tbsp tomato paste
- • 1 cup chicken or vegetable stock
- • 1/4 cup grated parmesan
- • 1/4 cup fresh basil leaves, torn
- • Salt & pepper, to taste
- • Extra basil + parmesan, to serve
Directions
- Prepare Qetoe Rice by covering both packets with boiling water and letting sit for 5 minutes. Fluff with a fork.
- Heat olive oil in a pan. Sauté onion until soft.
- Add garlic and cherry tomatoes; cook until tomatoes soften.
- Stir in tomato paste and cook for 1 minute to deepen the flavour.
- Add the Qetoe Rice to the pan and pour in stock. Stir for 2–3 minutes until creamy.
- Mix in parmesan and season with salt and pepper.
- Fold through fresh basil.
- Serve with extra basil and parmesan on top.
