This Spicy Coconut Grilled Chicken is juicy, smoky, and full of bold flavour — marinated in creamy coconut, chilli, garlic, and lime. It’s a simple, low-carb protein hero that pairs perfectly with Qetoe Low Carb Rice for a lighter bowl.
Ingredients
- • 400 g chicken thigh fillets
- • 1/2 cup coconut milk
- • 2 garlic cloves, minced
- • 1 tbsp lime juice
- • 1 tbsp soy sauce or tamari
- • 1 tbsp olive oil
- • 1 tsp chilli flakes
- • 1 tsp paprika
- • 1/2 tsp turmeric
- • 1/2 tsp salt
- • 1/4 tsp pepper

Directions
- Whisk coconut milk, garlic, lime juice, soy sauce, olive oil, chilli flakes, paprika, turmeric, salt, and pepper in a bowl.
- Add chicken thighs, coat well, and marinate for at least 20 minutes (or overnight for deeper flavour).
- Preheat a grill or grill pan to medium–high heat.
- Grill the chicken for 5–6 minutes per side until lightly charred and fully cooked.
- Rest for 2 minutes, then slice.
- Serve with lime wedges and Qetoe Rice if desired.
