This vibrant Pad Thai remake uses Qetoe Low Carb Udon-Style Noodles — thick, springy, and satisfying with 90 % fewer carbs than regular noodles. Tossed with egg, bean sprouts, tamarind, and crushed peanuts, it’s a fresh, guilt-free way to enjoy your favourite takeaway flavours at home.

Ingredients

  • 1 pack Qetoe Low Carb Udon-Style Noodles (200 g ready to eat)
  • • 1 large egg + 1 egg white, lightly beaten
  • • 100 g chicken breast or firm tofu, thinly sliced
  • • 1 tsp olive oil or sesame oil
  • • ½ cup bean sprouts (fresh)
  • • ¼ cup carrot matchsticks
  • • 1 tbsp crushed peanuts (+ extra to serve)
  • • 1 tbsp tamarind paste
  • • 1 tsp soy sauce or tamari
  • • ½ tsp fish sauce (optional)
  • • ½ tsp lime juice
  • • 1 tsp Qetoe Low Sugar Sweet Chilli Sauce (optional for mild heat)
  • • 1 tbsp chopped fresh coriander
  • • Lime wedges & extra bean sprouts for serving

Directions

  1. Prepare the noodles: Rinse Qetoe Low Carb Noodles under warm water and drain well.

  2. Cook the protein: Heat oil in a pan over medium heat. Add chicken (or tofu) and cook until browned and cooked through. Set aside.
  3. Scramble the egg: In the same pan, add egg mixture and stir gently until just set. Add cooked protein back in.
  4. Add flavour: Stir in tamarind paste, soy sauce, lime juice, and (optional) Qetoe Sweet Chilli Sauce.
  5. Toss noodles & veg: Add Qetoe Noodles, carrot, and bean sprouts. Toss gently for 1–2 minutes until evenly coated and heated through.

  6. Finish: Top with crushed peanuts, fresh coriander, and a squeeze of lime. Serve immediately for the best texture.
